My winter squash soup

1 large white onion, diced
Olive oil
1 medium-sized winter squash, chopped
2 medium potatos, diced
1 litre chicken stock (can be replaced with vegetable stock to make this vegetarian or vegan)
3 cloves garlic, finely chopped
White pepper (to taste)
Spices (cinnamon, nutmeg - add to taste)
Salt (to taste)

Sweat the onion in a large saucepan with the olive oil. When it's softened add the chopped squash and let it go slightly brown. Next add the garlic and diced potatoes, before adding the stock.

Let it simmer for about an hour, or until potatoes and squash have softened considerably. Blend with a hand blender and season with salt, pepper and spices to taste.
